Food Truck

Food trucks in Japan offer a kind of portable stage for photography, compact and predictable. They usually operate with permits issued by local governments, a detail that explains why they appear in the same spots around my neighbourhood in Tokyo. The setup is always similar, a small truck, a handwritten menu, and a queue of people who clearly decided that convenience beats ceremony (yet to arrive here though).

One small fact worth noting. Many trucks rely on commissary kitchens, since cooking entirely inside the vehicle is regulated. This means the food arrives half prepared, then finished on site, which creates quick bursts of activity that are easy to capture. You take a few shots, buy lunch, and move on. Efficient, practical, and visually reliable.
